I wanted to create a dessert that wasn’t too sweet or loaded with the usual raw vegan ingredient – dates. I was aiming for something similar to a Butter Cookie or Pecan Sandie, minus the butter of course.
So I did all the work for you and experimented until this delicious bar was born. Coconut Blondie Bars that are chewy, not overly sweet, and have a touch of crunch from white chia seeds. It’s a superfood bar that tastes like a Butter Cookie and I couldn’t be happier about that.

Here’s my recipe:
- ½ cup raw hazelnuts
- ½ cup raw walnuts
- ½ cup coconut flakes
- 1/3 cup organic rolled oats
- ¼ cup almond milk (just enough to bind)
- 2 Tablespoons coconut oil
- 2 Tablespoons white chia seeds
- 1 Tablespoon maca powder
- 1 teaspoon vanilla extract
- 2 scoops Orgain Vanilla Protein Powder
- 4 Medjool dates, soft & pitted
Instructions: Add all of the dry ingredients to a large food processor and pulse until everything is finely chopped. Add the dates and coconut oil. Turn the food processor on and let it run until combined, adding just enough almond milk to bind everything together in to a sticky dough. Line a 9×9 pan with parchment paper or plastic wrap for easy removal later. Press dough in to pan and allow to firm up in the fridge or freezer for at least 10 minutes. Slice and serve!
