These bars are lightly sweetened and make for a lovely dessert or snack. It’s similar to a Butter Cookie or Pecan Sandie, minus the butter of course.
If you’re craving something different, this treat is chewy, not overly sweet, and has a touch of crunch from the white chia seeds. It’s a superfood bar that tastes like a Butter Cookie. Yes please!

Coconut Blondie Bars
- ½ cup raw hazelnuts
- ½ cup raw walnuts
- ½ cup coconut flakes
- 1/3 cup organic rolled oats
- ¼ cup almond or other non-dairy milk (just enough to bind)
- 2 Tablespoons coconut oil
- 2 Tablespoons white chia seeds
- 1 Tablespoon maca powder
- 1 teaspoon vanilla extract
- 2 scoops Orgain Vanilla Protein Powder
- 4 Medjool dates, soft & pitted
Instructions: Add all of the dry ingredients to a large food processor and pulse until everything is finely chopped. Add the dates and coconut oil. Turn the food processor on and let it run until combined, adding just enough non-dairy milk to bind everything together in to a sticky dough. Line a 9×9 pan with parchment paper or plastic wrap for easy removal later. Press dough in to pan and allow to firm up in the fridge or freezer for at least 10 minutes. Slice and serve!
