Pecan Bars

There is no shortage of bad-for-you foods that offer the convenience of a drive-thru window. That’s why, I nip that sabotage in the bud and pack my own treats, like these pecan bars!

I’ve been driving A LOT these days. Not a complaint, it’s just the way it is. My car is one big purse and these bars are my snacks between appointments and errands.

These are definitely fall/winter inspired with cinnamon and clove, pecans and oats. I could have them with my homemade Matcha or Chai latte and call it a hefty snack or mini meal. Yes please!

Here’s my recipe:

Pecan Bars

  • 1 cup organic rolled oats, ground
  • 1 cup organic rolled oats
  • 2 teaspoons cinnamon
  • 1 teaspoon ground cloves
  • 1 cup chopped pecans
  • 10 Medjool dates
  • ¼ cup coconut oil

Add the 10 pitted dates and the coconut oil to your food processor. Process until well combined and resembling a soft paste. Set aside.

Add the remaining ingredients to a large bowl and mix to combine. Add the date paste and mix well until everything sticks together. (I prefer to do it this way so the bars don’t get too crumbly from the food processor blades)

Press in to an 8×8 pan lined with parchment paper. Place in fridge to harden. Ready when firm. Cut, pack, eat, share, enjoy!
