Top this delicious oatmeal bowl with your choice of fruit. Chopped apple, persimmon, banana – all great options. If you’re in a rush, warm almond milk and a splash of maple syrup is all you need.
Homemade Oatmeal Mix: Makes 3 1/2 cups of dry cereal mix
- 2 1/2 cups organic rolled oats
- 1 cup unsweetened coconut flakes
- 1 cup sliced almonds
- 1/4 cup golden flax seeds
- 1/4 cup chia seeds
- 1/2 cup date pellets*
- 1/2 cup unsulfured dried Bing cherries
Add all ingredients to a large bowl and mix to combine. Store in an airtight container. Will keep for at least 3 months in the pantry or longer in the fridge.
To serve, mix with hot water, almond milk or choice of dairy free milk and let sit for at least 10 minutes to soften and plump. Add maple syrup to taste. Garnish with your choice of fresh fruit.
*Date pellets are made by adding pitted Medjool dates and oat flour to a food processor. I add 6 dates to about 3/4 cup oat flour and process until the dates are crumbly, resembling pellets.
