I am a huge fan of hot breakfasts on a chilly morning. Smoothies will always have a special place in my heart, but in the winter, I want a warm bowl to hug as I fuel up with the all important first meal of the day.
I love this oatmeal cereal so much, I always have a batch at the ready in my pantry. It’s so good that whenever we take a road trip or plan to visit family, I have to make extra just for sharing. My nieces and nephews love it too and that just makes me so proud!
Top this delicious oatmeal bowl with your choice of fruit. Chopped apple, persimmon, banana – all great options. If you’re in a rush, warm almond milk and a splash of maple syrup is all you need.
Couple this with a homemade latte and your day is off to a delicious start. Enjoy!
Here’s my recipe: Makes 3 1/2 cups of dry cereal mix
- 2 1/2 cups organic rolled oats
- 1 cup unsweetened coconut flakes
- 1 cup sliced almonds
- 1/4 cup golden flax seeds
- 1/4 cup chia seeds
- 1/2 cup date pellets*
- 1/2 cup unsulfured dried Bing cherries
Add all ingredients to a large bowl and mix to combine. Store in an airtight container. Will keep for at least 3 months in the pantry or longer in the fridge.
To serve, mix with hot almond milk or choice of dairy free milk and let sit for at least 10 minutes to soften and plump. Add maple syrup to taste. Garnish with your choice of fresh fruit.
*Date pellets are made by adding pitted Medjool dates and oat flour to a food processor. I add 6 dates to about 3/4 cup oat flour and process until the dates are crumbly, resembling pellets.
