Lemon Blueberry Nice Cream
- 3 bananas, sliced and frozen
- 1/4 cup frozen blueberries
- 1 packet blue spirulina powder
- 2 teaspoons lemon juice
- 1 teaspoon lemon zest
- 1/4 – 1/3 cup almond milk (or enough to blend)
Add all of the ingredients to your high speed blender. If you’re using the Vitamix with the presets, it makes it easier. Set the dial to ‘ice cream’ and using the tamper, press the ingredients towards the blade so everything gets blended smoothly. If you don’t have presets, just start on a low setting and increase it to high as the ingredients start to break down. Don’t process longer than one minute. Set in freezer to firm a bit if needed. Scoop in to your favorite bowl and garnish as you wish. I used fresh sliced banana, frozen blueberries, and coconut flakes.
