Lemon Blueberry Nice Cream Bowl

Oh the endless possibilities of nice cream flavor combos! This Lemon Blueberry flavor is at the top of the list right now. It’s refreshing and light, fragrant from the lemon, and creamy-sweet from the ripe bananas. And of course, nutrient rich from the secret ingredient — blue spirulina powder.

Spirulina is a natural blue-green algae that grows in oceans and salty lakes in subtropical climates. It is loaded with health benefits!

Since it’s been over 100°F in my part of the world this summer; nice cream is a very welcomed treat, especially since it is loaded with nutritious ingredients.

Another confession I have to make — I tend to overbuy bananas – kind of on purpose. They’re just so beckoning off those produce shelves! I’d take them all home with me if I could. So far, 80 bananas a week seems to be our number. I buy different shades of green so they ripen as the week progresses. And the ones that spot too quickly get sliced up and thrown in to the freezer for nice cream bowls. Perfect for a quick blended breakfast or dessert. Yum!

Lemon Blueberry Nice Cream

  • 3 bananas, sliced and frozen
  • 1/4 cup frozen blueberries
  • 1 packet blue spirulina powder
  • 2 teaspoons lemon juice
  • 1 teaspoon lemon zest
  • 1/4 – 1/3 cup almond milk (or enough to blend)

Add all of the ingredients to your high speed blender. If you’re using the Vitamix with the presets, it makes it easier. Set the dial to ‘icecream’ and using the tamper, press the ingredients towards the blade so everything gets blended smoothly. If you don’t have presets, just start on a low setting and increase it to high as the ingredients start to break down. Don’t process longer than one minute. Set in freezer to firm a bit if needed. Scoop in to your favorite bowl and garnish as you wish. I used fresh sliced banana, frozen blueberries, and coconut flakes.
