Pitaya Mango Smoothie Bowl

Psalm 104:14 You cause grass to grow for the livestock and plants for people to use. You allow them to produce food from the earth —

This morning I read Psalm 104 with fresh eyes. God in His infinite and awesome creativity, made plants to grow and be food for us. Plants like fruit trees, berry bushes, nut trees, herbs, veggies, root plants, crazy looking things like Jackfruit and Pitaya — all bursting with color, flavor, and health to our bodies. It’s easy to get excited biting in to a sweet juicy mango or papaya and be overwhelmed with joy at just how good it is! But the truth is, God created it, and today like everyday, I’m thanking Him for it. I’m awestruck at the vast selection of deliciousness He made for you and me to enjoy in abundance!

More good news — Summer is here and so are the colorful seasonal fruits and veggies! Thank you Lord because I sure did miss all the tropical fruit and of course, my favorite — watermelon!

So for me, it’s sunshine and smoothie bowls today! Refreshing, hydrating, nutritious! What’s not to love?!

Here’s my latest creation:

 

Pitaya Mango Smoothie Bowl Recipe

  • 1 ripe golden mango, peeled, chopped and frozen
  • 3 ripe bananas, sliced and frozen
  • 1 Tablespoon Pitaya Powder
  • 1/4 – 1/2 cup fresh squeezed orange juice

Add all ingredients to high powered blender like this one. Blend on ice cream setting, or just on high until everything is well creamed. Serve with fresh orange slices, mango, banana, and optional white chia seeds. Enjoy!

 

On a side note, a friend recently asked me if I knew of a less expensive blender alternative to the Vitamix. Well, it just so happens I do! And I had the chance to personally use it and tell you what I think. I’m talking about the Salton Harley Pasternak. It’s about the same size as the Vitamix, and it does a great job for a $200 blender! Most importantly, it’s costs about $400 less than the Vitamix. You may even find it for less than $100 if you get it in a green or pink. We can all thank my brilliant husband for researching this one out. Budget friendly blender that works really well.
