There’s a parrot farm close to where I live and every morning they fly, perch in the nearby palm trees, and sing. It makes for a very tropical mood.
I’m a big fan of starting my day serenaded by happily chirping birds. It reminds me that the season is changing, renewing. It’s Spring time again and with that comes the fragrant breeze of orange blossoms, colorful blooms, and bright mornings with warmer weather.
This sweet pitaya bowl is the perfect breakfast to enjoy while listening to the sounds of spring in the morning.
There have been so many positive changes for me since I started this raw vegan journey just a little over a year ago. I went from having bacon and eggs & strong lattes to fresh fruit and smoothie bowls. Literally overnight, my husband and I made the change and within one week we knew this would be our lifestyle from here on out.
Aside from shedding unwanted weight, we have energy and stamina, mental clarity, great health. Isn’t that what it’s all about? Being healthy and feeling good, all the time! This is how we plan to keep age as “just a number” that doesn’t define our lives. Hoping to encourage and inspire others to make healthy changes as well!
Here’s my Pitaya Bowl recipe:
- 3 cups sliced, frozen bananas
- 2 cups frozen pineapple chunks (best if ripe and sweet)
- 1 cup frozen jackfruit (optional but it adds so much flavor to this bowl)
- 1/2 cup fresh squeezed orange juice (I used cara cara oranges)
- 1 Tablespoon pink pitaya powder
Add all ingredients to high powered blender (I use this Vitamix). Blend until smooth. Serve garnished with your favorite fruit, coconut flakes and optional drizzle of honey or agave. Enjoy!
