Good For You Caramel Nice Cream

If you’re a fan of sweet caramel and creamy vanilla nice cream, this bowl is for you! It’s decadent, delicious, and good for you!

Dessert can be the ultimate trickery. It beckons us to enjoy it and then kicks us with regret later. Whaaaaa just happened?!

That was my love-hate relationship with traditional dairy & sugar laden desserts; always bewildered – “..but why don’t you love me back?”

Throughout the year I’d get “serious” and do some diet, break myself at the gym to fit in to my skinny jeans, and defer the enjoyment of delicious foods to “cheat days.” Can you relate?

It never made sense to me that the foods we love and crave could do us so wrong. Maybe not at first, but sneakily, as time passes on — our dietary lifestyle choices define our shape, stamina, energy, and health. That’s a cycle I wanted to break as soon as I knew how.

It can be overwhelming at first, but it doesn’t have to be. Simple swaps can wean us off bad habits and make the transition smooth so we don’t feel deprived of the foods we crave.  “Now that’s what I’m talking about!”

This blog is all about my simple swaps. Things I love to eat that are actually healthy and delicious. Win win! My caramel nice cream is just one more favorite to add to the list.

 

Here’s my recipe:

Add ingredients to a high powered blender (this is the one I use). Blend until smooth. Serve in your favorite bowl garnished with whatever you like. I used crunchy cacao nibs, coconut flakes, nana slices, and my homemade caramel sauce. Enjoy!

  1. Hi, I saw you at Harvest OC last night and I really liked how this sounded!!! My brother-in-law is a vegan, so I was thinking about making this for his birthday. I was wondering how far in advance I could make it? Do you think I could leave it in the freezer for a day?

    1. Hi 🙂 The thing with nice cream is that it freezes solid in the freezer. It can totally be made in advance but make sure to thaw it out for at least 30 minutes before serving for the perfect consistency again. Add the garnish just before serving. Let me know how it turns out!
