Fruit is amazing and oatmeal has it’s place on my favorite’s list, but sometimes I crave savory. Enter, my version of the Avocado “toast”.
I usually make bread and cheese on a meal prep day so these lil sammies can be assembled in no time flat! Planning in advance really pays off on this one!
No one was ever born knowing how to cook and prepare food. We all learn somewhere along the way. It’s the same with raw vegan meal prep. I’ve cooked food for many years before changing my dietary lifestyle so I can attest to the fact that this is a much simpler way to eat and make food. It’s just a matter or relearning some things and then finding what works best for you.
Here’s my recipe:
For the Naan Bread:
- 1 cup fresh young Thai Coconut meat
- ½ c almond milk, unsweetened
- 2 small cloves garlic
- Juice from half a medium lemon
- 1 tsp salt
- 3 soft Medjool dates
Blend well using an immersion blender adding more almond milk as necessary to blend. It should be fairly thick & creamy though. Set aside.
- ½ c fresh ground Organic Golden Flax Seeds
- 2 tsp garlic powder
- 1/3 cup Psyllium Husk Powder
- 2 cups almond pulp – from making almond milk (damp is best)
In a food processor, mix all the dry ingredients adding the almond pulp last. Then add the wet ingredients and process until well combined.
If needed, you can transfer the mix to a large bowl and knead it a little just to combine better.
Roll out ¼ cup sized balls and flatten to form mini Naan bread pieces. Lay flat on a dehydrator sheet and dehydrate at 115 F for 4-6 hrs, flipping once to ensure even drying.
Store in airtight container in the fridge for up to 7 days.
For the Cashew Cheese:
- 1 c raw organic cashews, soaked at least 20 minutes or overnight
- 2 Tablespoons Nutritional Yeast (not regular yeast!)
- ¼ teaspoon salt
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- ½ lemon, juiced (approx 2 Tablespoons)
- ¼ c water, to thin
Blend until smooth! Optional: Add chopped fresh herbs like: parsely, dill, or cilantro.
Assembly: For the Cashew Cheese: Blend the above ingredients until smooth.
